I've been shooting rabbits for a while for pest control among other varmints and I kept getting asked by non-hunters and big game hunters why I wasn't eating what I shot. I would explain the purpose of and need for varminting but it made me curious if I could eat some of it (me being a serious meat lover). So I started reading articles and watching videos and it looked pretty simple to shoot, gut, and cook a cottontail(Not a jackrabbit!). So I went out a few weeks ago and shot three rabbits with me Marlin 22, skinned and gutted them and threw em in a cooler to take home. The next day I found a great recipe in a YouTube video for the legs and gave it a try. The legs turned out to be a lot like chicken and the little tenderloins I cooked up with carrots and potatoes and they tasted like turkey.
It might seem kinda strange to eat something you normally kill as pests but it turned out to be a really cool and practical experience being able to make a couple meals out of something so common and readily available. I'd highly recommend giving it a try. I guess next to try is coyote which some people claim is pretty good. Maybe I will when I finally get one...

Just about any chicken recipe will do
Try to go for a headshot, there isnt much meat left if you hit the body.
They won't be as big as the eastern or European rabbits so don't worry if they seem a bit small in comparison.
Also, make sure the liver is healthy with no spots, otherwise DONT EAT IT.
