I know when we go to Montana we shoot the cottontails and they taste fine. What's the deal with Jack Rabbits, taste good but as tender as a tire? I know I've seen one in Idaho before and could not believe the size and have heard they are legal to shoot.
What do you know? I'd be shooting in early April.

I've never ate one but I've never heard anything good about them either. Tough and stringy I've been told. But then again I know a guy that ate a badger, yuck! I've always just treated jackrabbits as varmints good targets. I have shot hundreds, maybe thousands, of them in so. western Utah in the 70's. Used to give them to a woman to feed to her hogs.

Tasted them once and never again, you could taste every bit of the desert in it. Cotton tail on the other hand is good eatin!!

He talked about eating a Rock Chuck. Never was at the top of my list, that's for sure. And he eats what he shoots, how many whistle pigs do you think he would think is a full meal?

72camaroi worked with a guy from Georgia, he once told me 3 squirrels was a full meal would it be the same for whistle pigs??!? Haha!! Broper I cant imagine your dogs stomach would agree with it, poor pup.

White-tailed jackrabbits are good table fare but they seem to be far and few in Owyhee County. The few I have taken were in the high desert country late in the fall or winter.
The more common black-tailed jackrabbit is smaller than its white-tailed cousin is and more abundant. I had some smoked that I harvested in late winter and they were quite tasty but chewy. I doubt if a black-tailed jack will ever find its way to my table.
These days, the white-tailed jack will find its way to the table while the black-tailed jack is used to draw in yotes. Partially skin one and the crows and magpies show up which attract the primary yote target.
